Fresh pasta is one of those things that I will never buy from the store again because homemade pasta is so easy to make from scratch! And it tastes so much better than what you can buy. Fresh pasta is a special treat in our house and it’s so nice to be able to flavor it however we want.

To make homemade pasta by hand, mix all of your ingredients in a bowl or the way I like to do it straight on the counter. Knead until combined and the dough has become elastic. When the dough is done, wrap and place in the refrigerator for 30 minutes -1 hour.

Homemade Pasta Recipe

We have two recipes that we like to use for making homemade pasta from scratch, the first one is a bulk recipe which allows us to store the leftovers for later so we don’t have to make it over and over and the second one is a much smaller one. Pick the recipe you like the most, the directions are the same for making it.

The Bulk Fresh Pasta Recipe

Ingredients:

8 Cups of Organic Flour

8 Large Eggs

2 Tablespoons Sea Salt

1/2 Cup Water

Directions:

Dissolve your salt in the water.

Measure the flour on to your counter and make a well in the center.

Crack eggs into the center of your flour and gently combine.

Add the salt water to your flour and egg mixture.

Gently kneed the mixture until it becomes elastic.

Wrap the dough or put it in a bag and place it in the refrigerator for 30 minutes – 1 hour.

Small Fresh Pasta Recipe

3 Cups flour

2 largeeggs

2 teaspoonvegetable or olive oil

3/4 cupwarm water

1/2 teaspoonsalt

Dissolve your salt in the water.

Measure the flour on to your counter and make a well in the center.

Add the salt-water and oil to your flour and egg mixture.

Mix together dough ingredients and knead for 10 minutes on a floured surface.

Place in a plastic bag and refrigerate for 2 hours or overnight.

My favorite method is to do it by hand, but feel free to use either of these methods.

Once your dough has finished resting (it’s really important not to scrimp on this step) you can begin rolling out the dough. Remove the fresh pasta dough from the bag or plastic wrap, and place it on a floured surface. Cut the dough in 4, 6 or 8 equal pieces with a knife or pizza cutter.

Gently roll out the fresh pasta dough to a thickness that you can run through your pasta maker. Feed the fresh pasta dough through your pasta maker on the widest setting, once it’s through fold it in 3rds and run it back through the pasta maker 2-3 more times on the same setting. Once it’s done work your way down through the settings one pass at a time until it reaches your desired thickness. If the dough gets to sticky lightly flour the dough. If your sheet of dough gets too long you can cut it in half so it’s easier to work with.

Once your pasta dough is done sprinkle it with flour again, and run it through the pasta cutter. Place the fresh pasta on a drying rack or swirl it into nests.

How To Roll Fresh Pasta With A Standup Mixer

This is the way that I prefer to roll my fresh pasta dough out because I find it the easiest. To roll out your pasta dough with a stand-up mixer, you will need the pasta attachments. Lightly roll out the pasta dough, just enough so that it’s easier to get through your attachments. Cut the dough into 4,6, or 8 pieces, and run it through the roller attachment on the widest setting. Continue running it through your pasta roller attachment until it reaches the desired thickness.

When the dough is ready, lightly flour (if you need to you can cut the sheets in half), and change to the cutting attachment. Run the sheets of dough through the cutting attachment. Hang on a drying rack, or swirl into nests.

How To Roll Fresh Pasta By Hand

To roll out your homemade pasta by hand remove it from the bag and place it on a lightly floured countertop. Cut it into 6-8 pieces. Select one piece of the fresh pasta dough and using a rolling pin (I like to use a wooden rolling pinHow To Make Homemade Pasta From Scratch - (14) to do this, the bigger it is the better especially if you go with the bigger recipe) begin rolling your dough out.

A good rule of thumb for how thick to roll the fresh pasta dough out to is, when you gently lift it off the counter you can see your hand through it. Slice the pasta dough into 5-inch sections with a knife or pizza cutter. Gently roll the sections of dough into loose flat cylinders. Cut the fresh pasta cylinders cross-wise to create the desired width of your noodles. Repeat with the rest of your fresh pasta dough.

Transfer your cut pasta to a drying rack, or a cookie sheet or dehydrator rack or swirl the fresh pasta into little nests on a floured surface and allow them to dry for 30 minutes.

How To Cook Homemade Pasta

Fill a big pot with water, a splash of oil and a sprinkling of salt, place it on the stove on high. Once the water has reached a rapid boil, add your pasta. Cook on high until the pasta has reached your desired doneness. When it’s done strain the pasta and serve.

How To Store Homemade Pasta

You can use the dough right away or store it for later by letting it dry for 30 minutes – 3 hours. Once your fresh pasta is dry, store in an airtight container to refrigerate for 2 days or freeze for up to two weeks (we have kept it frozen for longer and it was just fine). Transfer it to the refrigerator for 4-6 hours to thaw before you use it if you freeze it. Then cook as usual.
